Colour: Pale gold. Nose: Fresh fruit, peach and ripe berries. Palate: Sweet grape, over-ripe red apple, pleasant summer fruits then bitter chocolate and pepper spice. Finish: Rounded and structured with balanced spice and sweetness with impressive lengthy assertiveness.
Bushmills-16 Y.O.: ABV 40%
Colour: Copper gold. Nose: Honey, yoghurt and tinned stone fruits and a cinnamon spice character that develops in the glass. Palate: Full, thick and syrupy, rich with summer fruits, Christmas spice, pine oil, manuka honey and peaches in syrup. Finish: Long with notes of red berries and golden syrup.
Echlinville-Dunville’s Very Rare 10 Y.O.: ABV 46%
Colour: Yellow gold. Nose: Fresh green apples, cut green grass and tropical fruit notes. Palate: Soft and sweet with bubblegum, apple Jolly Ranchers and spiced vanilla custard. Finish: Medium in length with complex citrus notes and confectioners sweetness, sweet tropical fruit and a dry Riesling style ending with integrated wood.
Teeling-Single Malt N.A.S.: ABV 46%
Colour: Old gold. Nose: Intense white grape juiciness, joined by fresh malt and rolo’s developing into white chocolate the longer it’s in the glass. Palate: Medium bodied and silky with well placed fruit, backed up with cinnamon and white pepper, a touch of dried flower petals and strawberries. Finish: Lengthy with strong strawberry notes topped of with a touch of cream, very elegant.
Walsh Whiskey Co.-The Irishman: ABV 40%
Colour: Mid gold. Nose: Zesty spice, hints of black pepper, cinnamon and peaches leading to a slight hint of vanilla with a suggestion of green apples. Palate: Medium to full with spice, malt, dark chocolate, bourbon oak and crème caramel. Finish: Long finish with oak and butterscotch.
West Cork-10 Y.O.: ABV 40%
Colour: Old Gold. Nose: Green apple, subtle stone fruit, nougat and vanilla. Palate: Rich but soft with plenty of malt and a solid core of rich caramel, not as fruity as expected. Finish: Long and warming with gentle spice and a hint of milk chocolate.
